Black and White and Red

This hen is so pretty and such a good layer. We are excited that the days are getting long enough, warm enough, and dry enough that all of the hens are starting to renew their interest in the nesting boxes. Well, that is stretching it a little bit. The hens are actually renewing their interest in nesting, but not necessarily in the boxes provided no matter how much or how little we fluff the bedding.
These girls work so hard in the garden, spreading compost, eating walnuts, finding grubs, and sanitizing all of the property. This hen is a Barred Rock and sometimes called a Plymouth Rock chicken. They were first bred in this country in the early 1800's in the New England states. These chickens are not easily discouraged by cold weather and very dependably lay a richly colored brown egg. Of course all of the egg laying is done after the chores in the garden! Actually, the hens each have a specific time of day that they prefer to lay their eggs. This one happens to be a morning girl, but not too early!

Do you think she can tell she is being watched? She is looking in the coop from the outside. The hens get free range on the farm and the eggs are delicious. So here is to the girls and black and white and red all over the farm!

Shredded Beef Enchiladas

Tri tip bison or buffalo meat simmered with onion and garlic all day until it fell apart in tender, juicy shreds of tasty meat! The whole roast is enough for several meals for us. Part of it was used in the enchiladas.

After the meat was finished cooking, it was set aside to rest (aka chemical reaction) and the sauce was made. Then green chiles, cilantro, and some salsa were added to the shredded buffalo.

The salsa, sometimes called pico de gallo when it is chunky, had green peppers, jalepeno peppers, tomatoes, green onions, garlic, cilantro, and salt and pepper. It is fresh which is exactly what helps makes the enchiladas!

The sauce starts with 2 Tablespoons of butter, 1 Tablespoon of flour sizzling on medium heat in a cast iron pan. Add to it medium green enchilada sauce by Frontera. This one has tomatillos, garlic, and other tasty spices! After that, add about three cups from the tri tip broth that has been simmering all day. Now it is time to put this all together: Put sauce in the bottom of the baking pan, dip each corn tortilla that has already been heated in medium hot oil, into the sauce and fill with shredded beef mixture and cheese. Continue until all of the tortillas are filled and tucked seem side down in the pan. Now cover all of the enchiladas with sauce and more cheese and salsa!

Bake for 25-30 minutes or until the cheese is bubbling on top in an oven set at 350 degrees. You can add olives or other peppers if you want more or different flavors.

Top with more fresh cilantro and serve with fresh fruit or rice or beans or anything you like!


~ Mmmm, don't forget fresh avocado and sour cream on the side!

Burn Day

All of the branches from heavy winds, some snow, rains, and pruning have been hauled and stacked and sorted and the rest are given to the burn pile. February has been such a mild month of weather so far, so it is a good time to burn.

Tim added a few extra layers once the blaze took off and then the fire got hot!

Once the heat of the fire takes off, we spend the rest of the day scooping and circling and watching the blaze to keep the fire stoked and to keep the outer edges moved into the heat. Although the skies are clear, the air is cool so we weren't the only ones who enjoyed the heat!

The Nigerian Dwarf goats are always very curious and settled down for the afternoon festivities. They wandered over before the fire was hot and then found a perfect distance from the flames to enjoy the fire.

This little beauty especially enjoyed the ambiance of the winter burn pile!

February Kisses

These are 'The Brown Eyed Mommies' as Karyn nicknamed them when she was about 4! Both of our girls love the chocolate peanut butter cookie with so many names and before Karyn renamed them, they were Brown Eyed Susan's after the flower, but since 'Mommy' was making them, they became the Brown Eyed Mommies.

Typically, they have been made at Christmas time, but there is so much activity at Christmas, this year I decided to do a lot of the baking after Christmas. It has worked out nicely for grandkiddies, visitors to the farm, and us!

In the foggier, colder days of winter, a sweet treat is just the right comfort food with a pot of hot tea! It is also a great idea for Valentines! ~xx~

Happy Birthday, Anna!

Happy Birthday to Beautiful Anna! Five years old is the perfect age to enjoy rough and tumble activities with three brothers, torture them with the love of pink and purple, snuggle with Lucy the kitty, help Mama bake cupcakes, draw pictures and write letters, follow chickens around the farm with Nana and Papa, and start piano lessons! Happy Fifth Birthday, Anna! XOXO
